This Perfect Pesto Sandwich is perfect for those looking to add some extra protein into their diet. You also get a lovely helping of vegetables and herbs. We like to use herbs grown from our AeroGarden because, as you may know, fresh is simply better.
CREAMY PROTEIN PESTO INGREDIENTS
- ½ cup plain hummus
- 2 cups fresh basil
- 2 cups fresh arugula
- 3 Tbsp. minced garlic
- ¼ cup nutritional yeast
- 3 Tbsp. lemon juice
- Salt, to taste
- 2-4 Tbsp. oil or vegetable broth (add to make pesto more creamy)
PERFECT PESTO SANDWICH INGREDIENTS
- 1 cup smashed cooked chickpeas
- ⅓ cup creamy protein pesto
SLICE AND ADD IN
- ½ cup vegan mozzarella or avocado slices
- 4-6 slices of tomato
- 5-8 slices of cucumber
- 4-8 slices of jalapeño
- ¼ cup fresh greens
- Indian black salt and pepper, to taste
- Bread of choice
INSTRUCTIONS
- Process or blend the protein pesto ingredients together.
- Smash and mix together the chickpeas and protein pesto until well combined.
- Toast the bread with protein pesto and vegan cheese on it.
- Add in all the ingredients to make the sandwich.
